Delicious & easy Pulled pork

I figured out that some people might like to have my recipe for pulled pork. Its very cheap and you can feed a lot of people with a simple recipe.

Pulled Pork

Get a chunky piece of pork from the supermarket and skin it, leaving some fat back to keep some juiciness for the meat. Keep the skin, trust me.

Use mustard to massage a good layer on the whole piece of pork.

Make a spice rub for the pork using, 1 part Paprika, 1 part smoked paprika, 1/2 part garlic power, 1/2 part onion powder, 2 parts sugar and 1/2 part chilli powder (if you like). Use this rub to cover the mustard covered meat completly.

For the next step i recommend a slow cooker but you can also use the oven for it. Take a onions and half them to cover the bottom of the slow cooker. Add a glass of wine to the pot and put the pork inside the cooker. If you fancy some bay leaves, fruits or some chili go for it.

Leave the pork cooking before you go to bed or as long as needed for it to be pulled apart. The next day use two forks to pull the meat strings apart. The left over juice can be reduced in a pan, add corn flour to bind it for some gravy action.

Coleslaw

Grate carrots and cabbage (white or purple up to you) in equal parts. Add some chopped up onion to it. Mix into the bowl Mayonnaise, vinegar, salt and pepper until you are happy with the coleslaw sauce ratio.

Pork Cracklings

Take the pork skin i hope you saved and cut it in strips. Its important that the ratio of fat and skin is somehow equal, this will help to get amazing delicious juicy and crispy cracklings. Pre-heat an oven at 220°C. Put the pork skin strips into a tray and use another tray to lay on top of the skins so they don’t curl up but stay straight. Put the trays into the oven for 15 mins. Remove the top tray and leave it for 10 more minutes or until the pork cracklings look yummy. Take them out of the oven and sprinkle some salt on them.

Set up the Sandwich

This is how I like to do it.

Take a bread bun and cut it in half, toast them. Take the bottom half and add mayonnaise to it, on top of that some pickled gerkins. Now add the pulled pork either premixed with gravy or add the gravy on top. Take some BBQ sauce and add it to the journey. Now add some coleslaw on top and close it with the top of the bun.

Enjoy an amazing pulled pork bun!
